Free Dassel Activity - Smithsonian Exhibit

In case you haven't heard a traveling exhibit from the Smithsonian is in Dassel.

Yes, Dassel.

Kinda took me by surprise too!  It is actually created for small, rural communities, which I think is really cool.

The exhibit is called "Between Fences" and there is no charge to visit it.  It is located at the  Dassel Area Historical Society, 901 First Street, and will be there until December 5, 2009.

The hours are as follows:
Monday: 6:30 pm - 8:00 pm
Tuesday - Friday: 10:00 am - 4:00 pm
Saturday: 9:00 am-1:00 pm
Sunday: 12:30 - 3:00 pm


About the Exhibit: We live Between Fences. We may hardly notice them, but they are dominant features in our lives and in our history. Built of hedge, concrete, wood and metal, fences skirt our properties and are central to the American landscape. We use them to enclose our houses and neighborhoods. They are decorative structures that are as much part of the landscape as trees and flowers. Industry and agriculture without fences would be difficult to imagine. Private ownership of land would be an abstract concept. But fences are more than functional objects. They are powerful symbols. The way we define ourselves as individuals and as a nation becomes concrete in how we build fences. Through an examination of boundaries, place, and space, Between Fences will explore how neighbors and nations divide, protect, offend, and defend through the boundaries they build.

$1.00/1 12 pack of Pepsi products at Target.  Target often has these on sale for $3.00, which is a good deal for soda, $2.00 is even better.  And if there is a manny coupon out there somewhere, you can stack!

Also, I have heard news that Target is putting new restrictions on their coupons.  I don't know if the coupon generators will work in the future or not...for now, Hutch Target is still taking those from the generator HERE.

Baked French Fries, or, Oven Fries Recipe

I am NOT a fancy cook.

I like simple recipes with a few steps.

Wait, like?  Did I say "like"?

I LIKE my food served to me by a waiter or waitress, and I'll happily leave them a few bucks on the table for their service.

Unfortunately, the budget doesn't allow for too much of that anymore (though, we are fortunate that we can eat out at least once a week).  So, I seek out easy recipes-I'm still kind of a newb in the kitchen.

I came across this recipe in a magazine a while back.  Most of you probably already know it, but who knows, maybe I'm helping another kitchen newb!  Both Joe and I love it, and its super easy!  We also are big potato eaters here, so when we can eat them for fewer grams of fat and calories, we are all about it.

I cut up most of the 5lb bag of taters I picked up yesterday at the store, so I figured I would share the recipe with you!

Ingredients:
  • Potatoes
  • Olive oil, or non-stick spray
  • Spices.  We like Mrs. Dash Extra Spicy.
Directions:
Wash the potatoes.  Cut them in half the long way, then cut each half in half.  So you end up with 4 fries per potato.  You can actually cut them up however you would like.  It truly doesn't matter.  If we are making these fresh, I often make hubby slice the taters because knives scare me.  He uses the mandolin to slice them.



Put all the slices into a bowl, drizzle on some olive oil - I don't measure, just do a bit, enough to lightly coat the fries and make the spice stick.  If you are using the non-stick spray, spray a cookie sheet, then place your potatoes on a cookie sheet, and spray the potatoes.

 


Sprinkle your spices on top.  Again, I don't measure.  Whatever looks good. :)




If you are doing the bowl method, toss them a bit to even out the oil and the spice.  If doing the cookie sheet, just wing it!

Cook at 450 degrees for about 20 minutes until they are crispy looking.

Today, I made 63 french fries and froze them.  The olive oil method works great for freezing.  Just take them out and cook as normal.  It might take a few more minutes in the oven because they are frozen, but not by much.  You do not have to pre-cook them before freezing.  Just freeze them raw after you have tossed in oil and spices.  I have kept mine in the freezer for a month without any issues/taste change.

Printing Coupons and Printer Ink

Printing as many coupons as I do take a lot of ink.  Everywhere in town, the ink we needed was $40.  Ouch!

Then I found inkplustoner.com.  $20.

Yahoo!!

It gets even better!  I used a shopping program that gives you cash back on internet purchases called Mr. Rebates, and earned 12% back!

And even better....Mr. Rebates also gave me a 5% off code.  And shipping was FREE.

Shut the door!!

So in all, for right around $17 we now have ink in the printer on my desk.  Ahhh, it feels good to print as I please now. 

And just as a reminder, if you print a lot of coupons-I do suggest you print them in "fast" or "draft" mode on your printer to use less ink.  I print mine in color (when using my printer, hubby's is just black) - so the cashiers know it's legit and NOT a copy.

Watch your newspapers this weekend, big Red Plum insert to be expected!

North Dakota Frugal Mom alerted me of this coming weekend's Red Plum ad is expected to be a biggee!  Their biggest of the year.

If I am on top of my game enough this week, I will post some of the info from Sunday Coupon Preview as I get it.

Watch for this in your Start Tribune's and Pioneer Press newspapers.  It *might* even be worth picking up a few extra copies for.  We'll see!

Tonight I hit Cash Wise...alone.

No toddler.

I love you baby, but man was it nice to shop alone!

I spent right around $27, had a coupon for almost everything, and got the following:
  • 4 bags of Kraft Shredded Cheese (now in the freezer)
  • 1 5 lb bag of potatoes (some of these will be cut up, sprinkled with olive oil and Mrs. Dash Extra Spicy and then froze for quick french fries)
  • 3 bags of frozen fruit
  • 1 box of Oatmeal to Go bars (drool - I couldn't resist despite not having a coupon!)
  • 1 large box of Quaker Oatmeal (gonna make granola, yum!)
  • 2 bags of King's Hawaiian Dinner Rolls
  • 6 Food Club Yogurt Cups
  • 1 box of Uncle Ben's Long Grain & Wild Rice
  • 2 McCormick Gravy Mixes
  • 1 pack of Johnsonville Ground Sausage
  • 1 2 pack of Ziploc Holiday Containers
  • 1 loaf Country Hearth Honey Wheat Bread
I saved a total of $12.28 in coupons.  Not my best, but good, it's quite a bit of food and all things we needed (and wanted) and, most important, right in budget!

Easy Tartar Sauce Recipe

The other night when I realized my pork chops had freezer burn due to a punctured package, my motivation to cook drained from me.  I dug through the freezer for something, and ended up with fish sticks and french fries.

I only like fish sticks when they are bathing in tartar sauce; however, we didn't have any.  Instead of dropping a couple bucks at the store, I made my own!

Ingredients
  • 1 cup of mayo (I used Kraft Miracle Whip)
  • 1 dill pickle (I used a few baby dills)
  • 1 tbsp oregano
  • a bit of onion...maybe like 1/4 cup
  • a couple drops of Tabasco for taste
Ya, I didn't measure much...sorry about that!  I did read a couple recipes that mentioned lemon juice, salt/pepper, and sweet pickle relish.  I just kinda adapted it to what I had on hand.

Directions
Cut up the pickle, and mix everything into the mayo.  Done!  I mixed it (and served it, he he) from a Pyrex measuring cup.  Worked slick.  Yum.

Here is the line-up for this week!  As usual, some carry-overs from last week because we didn't make them - last week turned into a few hodge-podge meals, like fish sticks because the pork chops I wanted to make had FREEZER BURN!!  I did make my own tartar sauce that was delish though, check it out HERE.

  • Roast in the crock pot - need to find a good sauce or something-any suggestions?, some kind of potato, veggies
  • Chicken parmasean
  • Egg Bake (not sure of the recipe yet)
